Just joined so I thought I'd open with one of my favorite cheap cassaroles from childhood. This is a great pantry dish and it's even better the next day as leftovers however we never had very much left.

1lb hamburger
1/2 cup diced onion
1 can early sweet peas drained
2 cups cooked white rice
2 cans condensed tomato soup. (sometimes I splurge and use spaghetti sauce)

Brown hamburger and onion (salt/pepper) then drain. In a cassarole dish layer meat and onions on the bottom. Add peas then tomato soup (do not add milk) then top with enough rice to cover by about 1/2 inch. Amts. may vary depending on the size of your dish.

cover and bake at 350 for about 25-30 minutes until bubbly.

I never thought of that I might have to try it next time. Probably a little parm. thanks for the idea.
